|LOCATION OF WORK|
|Under the direction of the Detention Facility Manager, performs responsible supervisory work coordinating the food service and laundry operations at the detention facility. Work involves responsibility for the efficient operation, supervision, and preparation of a variety of foods, the care and cleaning of kitchen equipment and facility. Work also involves record maintenance, as well as responsibility for ensuring adherence to a prescribed schedule, and safety and sanitation standards. Incumbent may also supervise and instruct subordinates in all aspects of laundry operations, including duties such as cleaning the laundry room, and distributing and sorting clothing items. Exercises independent judgment within prescribed standards and regulations. Tours of duty are on a shift basis (day and/or night), may include weekends and holidays and are subject to rotation. Performs other work as requested.|
|ESSENTIAL WORK TASKS|
|Coordinates and evaluates work of subordinates engaged in providing food and laundering services to juvenile offenders and juvenile staff.
Determines availability of commodities; orders and requisitions food items and equipment; supervises the issuance of supplies.
Maintains a variety of records and reports on a daily basis relative to food service and laundry operations; ensures school food service guidelines including meal patterns, nutritional requirements and safety standards are adhered to.
Prepares meats, fish, poultry, vegetables and soups; prepares and bakes breads, cakes, cookies and pies; cook menu-directed food items in accordance with established recipes.
Operates dishwasher and standard cooking equipment such as mixing machines, slicer, steam cookers, toasters, food choppers, baking ovens, electric stoves, steam tables, kitchen scales and salad bar.
Ensures that standardized recipes are properly followed.
Provides instruction to subordinate staff concerning proper serving methods, sanitation, safe work methods, storage and cleaning tasks; provides instruction relative to laundry operations.
Receives deliveries of food and non-food items; verifies that quantities and quality are appropriate; forecasts needs of food and supplies; maintains required portion control.
Assists in the development and establishment of work standards and methods.
Performs other supervisory duties related to food services and laundry functions.
|KNOWLEDGE, SKILLS, AND ABILITIES|
|Knowledge of the materials, methods and equipment used in preparing food on a large scale.
Knowledge of the care and cleaning of kitchen equipment.
Knowledge of health, sanitary and safety practices involved in food preparation and safety precautions in laundry operations.
Knowledge of materials and methods used in laundering, sewing and mending clothing.
Skill in the use and care of kitchen utensils and equipment.
Skill in the operation of a calculator and other office machines.
Ability to work from written menus and standard recipes and to adapt them to the requirements of varying numbers of meal preparations.
Ability to work with delinquent youngsters.
Ability to maintain accurate and complete records and reports.
Ability to plan, organize and supervise work of subordinates.
Ability to establish and maintain effective working relationships with subordinates and other staff.
Physical stamina to work while standing and under conditions of high temperature and humidity.
Ability to apply good work habits such as punctuality, reliability, preciseness, and dependability in order to effectively complete assigned tasks and contribute to the smooth operation of the department and division.
|EDUCATIONAL AND EXPERIENCE|
|High school diploma, GED or equivalent certificate of competency, and three years experience in institutional or commercial food preparation.|
|Any equivalent combination of education and experience.|
|Ability to obtain State Department of Education School Food Service Training Certification.|

|In accordance with Licensing Standards of the Louisiana Administrative Code (Title 67, Part V, Subpart 8, Chapter 75, Juvenile Detention Facilities, §7511. Facility Responsibilities, B. Criminal Background Clearance), all employees of this classification assigned to the Juvenile Services Detention Center must pass a criminal background check and/or be fingerprinted at the time of appointment. Both appointment and continued employment at this location is contingent upon the ability to pass a criminal background check. Failure to pass a criminal background check renders a candidate or current employee ineligible for employment at this location. |
